FarPlay works fine when I rehearse with someone, but when I try to livestream, there are spikes in latency.

You might be overburdening your computer by trying to run, not merely FarPlay, but also your livestreaming platform. When this happens, your processor can get hot, and your computer might try to protect your processor by reducing the speed with which it runs, degrading software performance. In particular, since the MacBook Air M1, MacBook Airs have been fanless and have had no active way to cool themselves.
You can try to cool your computer with an external fan.
Check that fans and vents are not clogged with dust.
You can try to use a more powerful computer (a Mac with an M1 or higher processor and fans works great for running FarPlay and livestreaming—through a web-based studio as available through Restream, or through an app like OBS).
