Must I use Ethernet?

If you want the ground-breaking ultra-low-latency that FarPlay can provide, yes. Please use a CAT5e (CAT6 is easy to find and is great) Ethernet cable. Ethernet cables are cheap (typically $15 or less) and easy to find, for example at https://farplay.io/requirements/.
Wi-Fi as found in most homes provides fluctuating delay and is likely to add around 30 ms to one-way latency — this is like standing 30 feet farther from your musical partner.
Avoid using repeaters, extenders, and Ethernet-over-power adapters.
If a home network uses properly configured Wi-Fi 6 or newer, it might be possible to use FarPlay to make rhythmic music in sync over Wi-Fi, but it’s still safer and, often, simpler to use Ethernet.
